Warm up with Hearty Bison Taco Chili

During the winter, there is nothing more comforting than a steamy hot bowl of soup– especially on those snow days! Whether you’re having friends over or staying in for a cozy movie night at home, this hearty bison taco chili is bound to satisfy your soup craving. And, there’s no need to worry about running out because this makes plenty of leftovers for the nights when cooking is the last thing you want to do.

So, why Bison? Well, I’m glad you asked! Bison is very similar to beef in it’s nutritional benefits and is an excellent source of iron, zinc, and certain B vitamins. But when it comes to bison, it is illegal to use any growth hormones, even when it is not organic. Also, it is a leaner meat than beef due to the nature of their muscle structure. Bison has become the new beef in my household and I encourage all who read to give it a try!

Oh, and did I mention how easy this recipe is? Being a college student, I am consistently crunched for time. That’s why I am always on the hunt for healthy dishes, without a worrisome time tag. The most time consuming part of the recipe is cooking the bison. Other than that, you just combine all the ingredients in the pot and let it do its thing! Simple, quick, and delicious. 

P.S. If you are itching to get some greens in like I always am, stir in some fresh spinach or kale and cook it for a few minutes. The lettuce will wilt and the chili’s nutrition will be enhanced!

Ingredients
  1. 1 lb organic bison
  2. 1 small red onion
  3. 3 cloves garlic
  4. 1 cup vegetable or chicken stock
  5. 2 cans northern beans
  6. 1 can black beans
  7. 1 can sweet corn (drained)
  8. 1 can tomatoes with chilies
  9. 1 small can black olives (drained)
  10. 3-4 cans diced tomatoes
  11. *organic if possible
  12. 3 tsp pink Himalayan sea salt
  13. 1 tbsp fresh ground pepper
  14. 2 tbsp chili powder
  15. 2 tsp cumin
  16. 1 tbsp parsley flakes
  17. 2 tsp dill weed
  18. 2 tsp turmeric
  19. 1 tsp red cayenne pepper
  20. 1 1/2 tbsp cocoa powder
  21. 1 tsp oregano
  22. 2 tsp paprika
Instructions
  1. Chop the onion and add to a big soup pot. Also add the bison and cook on medium-high heat, occasionally string, until thoroughly cooked. Time saver tip: while the bison is cooking, start opening all the canned goods to cut down on time.
  2. Add all other ingredients and spices to the pot. Reduce the heat to medium-low.
  3. Let it simmer for at least 30 minutes, then serve!
Notes
  1. Crackers, tortilla chips, avocado, or toasted bread pairs well when serving!
