While the weather is still a bit warm, all I crave in the mornings are smoothie bowls to start my day! I used to be a strictly fruit kind of a girl, but lately I’ve been mixing it up and sneaking extra veggies in. It makes you feel like a total badass and starts your day with an extra boost of vitamins!
You may or may not be a part of the latest craze of adding frozen cauliflower to your smoothie/smoothie bowls. Whether or not you’ve tried the cauliflower version, you need to try this Sweet Pepper Pitaya Bowl! It uses the same concept of sneaking in frozen veggies to plump up your smoothie without spiking your bowl with too much sugar. This bowl is packed with Vitamin C, Vitamin A, and essential minerals. The sweetness of the pepper perfectly compliments the sweetness of the frozen fruit.
I recommend steaming your bell pepper and then freezing, but you could use frozen bell pepper straight from the freezer, as well. Any color will work, but I used my favorite, red. I topped my bowl with a mixture of seeds and berries and chocolate nut butter, but get creative! The ideas are endless.
- 1 packet pitaya
- 1 c. unsweetened almond milk
- 1/2 frozen bell pepper
- 1/4 c. frozen cherries
- 1 scoop vanilla protein powder
- 1 TBS cashew butter
- Sunflower seeds
- Blend all ingredients pitaya - cashew butter in a high speed blender until smooth. Top with mulberries, goldenberries, pepitas, and sunflower seeds.
